Chicken soup tailor made for my soul

Well, I just made an incredibly delicious chicken and mussel tom-yum. So I thought I'd share the recipie - or at least what I remember doing.



Ingredients:
  • 100g diced chicken
  • 2 tomatoes, finely chopped
  • 8 marinated mussels, finely chopped
  • 140g dried egg-noodles
  • The juice from half a lemon
  • 2 teaspoons of salt
  • 1 heaped teaspoon of chili powder
  • ½ teaspoon of that that stuff Gregg's markets as "Chinese 5 spice"

Directions:
Put the salt and the chicken into a pot of boiling water. Stir briefly until the cubes separate. Then add the tomato and mussels. Boil for about a minute, then add the mussels, and noodles. Boil until the noodles look al-dente. Then add the lemon and spices. Stir well while boiling another minute or so. Then comes the most difficult part: serving.

Serves 1, but he eats two bowls of the stuff.
